Cooking Time: 20-30 min

🥄 Ingredients

  • 1–2 cups all-purpose flour (maida)
  • 1/2 cup powdered sugar or sugar syrup
  • Pinch of baking soda or baking powder
  • Salt, to taste
  • Pinch of orange food color (optional)
  • 4–5 teaspoons melted ghee
  • Water, as required
  • Oil, for deep frying

👩‍🍳 Method

  1. In a large bowl, combine the all-purpose flour, salt, powdered sugar, and baking soda. Mix well.
  2. Add melted ghee and mix thoroughly to combine.
  3. Make a small well in the center of the flour mixture and add a pinch of orange food color (optional).
  4. Slowly add water little by little, mixing to form a soft dough that holds together. Knead the dough well. If needed, dip your hands in water while kneading to prevent sticking.
  5. Cover the dough with a damp cloth and let it rest for 1 hour.
  6. Heat oil in a deep frying pan over medium heat.
  7. Divide the dough into small equal portions and roll each into a ball. Keep them covered with a napkin to prevent drying.
  8. After resting, roll each ball into a flat round chapati, about 5–7 mm thick.
  9. Cut the rolled dough into diamond or square-shaped pieces.
  10. Carefully drop 6–8 pieces into the hot oil and fry until golden brown. Remove and place on paper towels to drain excess oil.
  11. Repeat the process with remaining dough portions.
  12. Allow the Shankar Pali to cool completely, then store in an airtight container.
