Shankar Pali Recipe | Sweet Diamond Cuts for Diwali (Goan Style)

Shankar Pali is a delicious Indian sweet snack made from maida (all-purpose flour), sugar, and ghee. Crispy and golden, it’s perfect to enjoy with hot tea or as a tasty snack anytime.

🥄 Ingredients
- 1–2 cups all-purpose flour (maida)
- 1/2 cup powdered sugar or sugar syrup
- Pinch of baking soda or baking powder
- Salt, to taste
- Pinch of orange food color (optional)
- 4–5 teaspoons melted ghee
- Water, as required
- Oil, for deep frying
👩🍳 Method
- In a large bowl, combine the all-purpose flour, salt, powdered sugar, and baking soda. Mix well.
- Add melted ghee and mix thoroughly to combine.
- Make a small well in the center of the flour mixture and add a pinch of orange food color (optional).
- Slowly add water little by little, mixing to form a soft dough that holds together. Knead the dough well. If needed, dip your hands in water while kneading to prevent sticking.
- Cover the dough with a damp cloth and let it rest for 1 hour.
- Heat oil in a deep frying pan over medium heat.
- Divide the dough into small equal portions and roll each into a ball. Keep them covered with a napkin to prevent drying.
- After resting, roll each ball into a flat round chapati, about 5–7 mm thick.
- Cut the rolled dough into diamond or square-shaped pieces.
- Carefully drop 6–8 pieces into the hot oil and fry until golden brown. Remove and place on paper towels to drain excess oil.
- Repeat the process with remaining dough portions.
- Allow the Shankar Pali to cool completely, then store in an airtight container.
