🥟 Sweet Potatoes Nevryo (Kangachi Nevryo)
A traditional Goan sweet prepared especially during festivals. These golden-fried dumplings are filled with a delicious coconut-jaggery mixture and wrapped in a soft sweet potato dough — a healthy twist to the classic nevryo!

🧾 Ingredients
- 3 to 4 sweet potatoes
- ¾ cup freshly grated coconut
- ⅓ cup jaggery (adjust as per taste)
- ⅓ cup whole wheat flour
- A pinch of salt
- Oil for frying
- Butter paper (for shaping)
🔪 Preparation Steps
- Boil sweet potatoes until soft.
- Peel and mash them well using a grater or grinder. Set aside to cool.
- In a pan, add grated coconut and jaggery.
- Cook on a low flame for 5 minutes till the mixture blends well.
- Turn off the heat and let it cool.
- To the mashed sweet potatoes, add wheat flour and a pinch of salt.
- Mix and knead into a soft, slightly sticky dough. Do not add water.
- Place butter paper on a plate and dust it lightly with flour.
- Oil your hands to prevent sticking.
- Take a small ball of dough, place it on the butter paper, and press it into an oval shape using your fingers.
- Add a spoon of filling on one side, then fold it to form a half-moon. Seal the edges gently.
- Heat oil in a frying pan.
- Carefully slide in the nevryos and fry till they turn crisp and golden on both sides.
- Drain on a tissue.
