There’s something magical about enjoying hot pakoras during the rainy season – and what if you could make them using last night’s leftover rice? These Leftover Rice Pakodas are crispy on the outside, soft inside, and bursting with desi flavors. A smart, tasty way to reduce food waste and treat your family to a hot, crunchy snack with evening chai!

Ingredients:

  • 1 cup leftover cooked rice
  • 1 medium onion, finely chopped
  • 1–2 green chilies, finely chopped (optional)
  • 2 tablespoons fresh coriander, chopped
  • 1/2 teaspoon cumin seeds or ajwain (carom seeds)
  • Water as needed


Instructions

  1. Mash the Rice: In a mixing bowl, lightly mash the leftover rice using your hands or a spoon.
  1. Mix Veggies & Spices: Add chopped onions, green chilies, coriander, ginger-garlic paste, turmeric, cumin or ajwain, and salt. Mix well.
  1. Bind with Besan: Add besan gradually to the rice mixture. Sprinkle a little water to form a thick batter – it should be sticky but not runny.
  1. Heat Oil: Heat oil in a deep pan or kadai over medium flame.
  1. Fry Pakoras: Drop small spoonfuls of the mixture into the hot oil. Fry until golden and crispy on all sides.
  1. Drain & Serve: Remove on paper towels to drain excess oil. Serve hot with green chutney or ketchup and a cup of chai.
