Ingredients:
- 1 cup leftover cooked rice
- 1 medium onion, finely chopped
- 1–2 green chilies, finely chopped (optional)
- 2 tablespoons fresh coriander, chopped
- 1/2 teaspoon ginger-garlic paste https://amzn.in/d/bWPGbg0

- 1/2 teaspoon cumin seeds or ajwain (carom seeds)
- Salt to taste (tata salt)
- 2–3 tablespoons besan (gram flour) (Fortune Chana Besan)
- Water as needed
- Oil for deep frying Fortune Sunlite Refined Sunflower Oil
Instructions
- Mash the Rice: In a mixing bowl, lightly mash the leftover rice using your hands or a spoon.
- Mix Veggies & Spices: Add chopped onions, green chilies, coriander, ginger-garlic paste, turmeric, cumin or ajwain, and salt. Mix well.
- Bind with Besan: Add besan gradually to the rice mixture. Sprinkle a little water to form a thick batter – it should be sticky but not runny.
- Heat Oil: Heat oil in a deep pan or kadai over medium flame.
- Fry Pakoras: Drop small spoonfuls of the mixture into the hot oil. Fry until golden and crispy on all sides.
- Drain & Serve: Remove on paper towels to drain excess oil. Serve hot with green chutney or ketchup and a cup of chai.
