🍰 Jackfruit Cake – Goan Traditional Delight

A beloved Goan breakfast treat, Jackfruit Cake is soft, mildly sweet, and infused with the tropical richness of ripe jackfruit. Made with rava, jaggery, and coconut, it’s perfect with a hot cup of tea or coffee.

🧾 Ingredients

  1. Jackfruit pulp – as needed
  2. Idli Rava (semolina) – 3 cups
  3. Grated jaggery – 1 cup (adjust to taste)
  4. Grated coconut – ½ cup
  5. Cashew nuts – a handful
  6. Chopped almonds (badam) – as desired
  7. Salt – to taste
  8. Pure ghee – 2 tsp + more for greasing
  9. Water – as required for batter consistency

🔪 Method

Prepare the Jackfruit Pulp

Blend the ripe jackfruit in a mixer until smooth. Set aside.

Roast the Rava (Optional)

Heat 2 tsp ghee in a pan and roast the rava till light golden and aromatic. (You can skip roasting if preferred — as in today’s version.)

Mix the Batter

In a large mixing bowl, combine:

  • Jackfruit pulp
  • Idli rava
  • Grated coconut
  • Grated jaggery
  • Salt
  • Chopped dry fruits
  • Add water gradually to form a thick, pourable batter. Mix everything thoroughly.

Grease the Vessel

Grease a pressure cooker or idli container with ghee.

🍯 Baking Options

Option 1: Pressure Cooker Method

  • Pour the batter into the greased cooker.
  • Place it on a small burner over low flame without the whistle.
  • Cook for 45 minutes, then add 1 tbsp ghee along the sides and cook for 15 minutes more.
  • Cool completely, loosen the sides with a knife, and unmould.

Option 2: Idli Cooker with Banana Leaf

  • Line the idli steamer with greased banana leaves and pour in the batter.
  • Steam on low flame for 20 minutes. Check doneness with a knife. If needed, steam for another 10–15 minutes.
  • Let it cool before slicing.


🍽️ Serving Suggestion

Slice and serve with tea or coffee. Garnish with grated coconut and more chopped dry fruits for a festive touch!
