📝 About the Recipe

Gawar, also known as cluster beans or chitki bhaji in Konkani, is a highly nutritious vegetable rich in protein, calcium, phosphorus, and fiber. Though slightly bitter, its earthy flavor blends beautifully with coconut and mild spices, making it a delicious side dish.

This simple Goan-style preparation uses fresh grated coconut and green or red chilies to balance the bitterness and bring out its authentic coastal flavor.

🧂 Ingredients

  • 1½ cups cluster beans (chopped slantwise)
  • 1 small onion (chopped)
  • 1 small tomato (chopped) or 2–3 kokum (sola)
  • 1–2 green chilies or fresh red chilies (slit)
  • ½ cup grated coconut
  • 1 tsp mustard seeds
  • ½ tsp turmeric powder
  • A pinch of sugar
  • Salt to taste
  • 1–2 tsp oil

🍳 Method

Prep the Beans
  • Wash and chop the cluster beans into small diagonal (slanting) pieces.
Temper
  • Heat oil in a kadai or pan.
  • Add mustard seeds and allow them to splutter.
Sauté the Base
  • Add chopped onions and sauté until golden brown.
  • Add turmeric powder and stir.

Cook the Beans
  • Add chopped cluster beans and a little water.
  • Cover with a lid and let it cook on medium heat until half done.
Add Flavor
  • Add green chilies, grated coconut, salt, a pinch of sugar, and tomato (or kokum for a more traditional tang).
  • Mix well and cook on low flame until beans are soft and flavors are combined.
