๐ Brinjal Fry – Goan Style
Crispy, golden, and mildly spiced — Brinjal Fry (also called Eggplant Fry) is a classic Goan side dish that pairs wonderfully with rice and curry. It’s simple, quick, and full of flavor!

๐งพ Ingredients
- 1 large brinjal (eggplant/baingan)
- 2 tsp red chili powder
- 1 tsp turmeric powder
- Salt to taste
- Rava (semolina) – for coating
- Oil – for shallow frying
๐ช Method
Slice the Brinjal
Wash and cut the brinjal into medium-thick round slices.
Marinate
- Sprinkle turmeric powder, red chili powder, and salt over the slices.
- Mix well and let them rest for 10 minutes to absorb the flavors.
Coat with Rava
Lightly press each slice in dry rava so that both sides are evenly coated.
Fry
Heat oil in a frying pan. Place the rava-coated slices on the pan and fry on medium flame until both sides are golden brown and crispy.
Serve Hot
Enjoy with Goan rice and curry or as a crispy tea-time snack.
