🧂 Ingredients

½ cup freshly grated coconut

1 onion, chopped

1 tsp red chili powder
-
1 tsp coriander powder (or coriander seeds)

½ tsp turmeric powder
-
Small ball of tamarind
-
1 tsp ginger-garlic paste (or fresh ginger and garlic)

1 tsp cumin seeds (or cumin powder)
-
1 tomato, chopped
-
1 tsp garam masala
-
4 eggs
-
Salt to taste
-
Oil as required
-
Fresh coriander leaves for garnish
🍳 Method
1. Prepare the Coconut Base

Heat a little oil in a pan.

Add chopped onion and sauté until golden brown.

Add grated coconut and fry until golden and slightly crisp.

Remove from heat and allow to cool.
2. Grind the Masala

In a mixer, grind the fried onion and coconut with chili powder, turmeric powder, coriander powder, tamarind, and a little water to make a smooth paste.
3. Cook the Gravy

Heat oil in a pan.

Add cumin seeds and allow them to splutter.

Add ginger-garlic paste and sauté until the raw smell disappears.

Add chopped tomato and cook until soft.

Add the ground paste and adjust consistency with water if needed.

Add salt and garam masala.

Let the gravy simmer.
4. Add the Eggs

Once the gravy is boiling gently, crack the eggs one by one directly into the curry.

Do not stir immediately.

Cover and cook until the eggs are set to your preference.
5. Garnish & Serve

Garnish with fresh coriander leaves.

Serve hot.
