Ansache Tonak, also known as Pineapple Sasav, is a much-loved Goan dish made in almost every household. The curry beautifully blends the tropical sweetness of pineapple with coconut, tamarind, jaggery, and a mild spice kick. Despite its sweet taste, pineapple is low in calories and high in vitamins, antioxidants, and enzymes that boost immunity — making this dish both delicious and nutritious.

📝 Ingredients
- Finely chopped pineapple
- 1 cup freshly grated coconut
- Small ball of tamarind
- 1 tsp red chili powder
- Jaggery (as per taste)
- Few curry leaves
- 1 tsp mustard seeds
- 1 tsp oil
- Salt to taste
👩🍳 Method
- Chop the pineapple into small pieces and keep aside.
- Grind coconut, tamarind, chili powder, and jaggery into a fine paste using a little water.
- Heat oil in a kadai. Add mustard seeds and curry leaves; let them splutter.
- Add the chopped pineapple. Cover and cook until soft.
- Add the ground coconut mixture and salt. Mix well.
- Cook on medium flame until the raw smell disappears and the curry thickens.
- Serve hot with chapati or Goan bread (pao).
