🍠 Sweet Potato Kheer | Creamy Indian Dessert with Jaggery & Coconut Milk

Sweet potatoes are not only delicious but also packed with fiber, essential vitamins, and minerals. This kheer (pudding) made from sweet potato and milk is a nutrient-rich, energy-boosting dessert, traditionally prepared during festivals like Gudi Padwa in Goan homes. Adding coconut milk makes it even more indulgent and aromatic.

🧂 Ingredients
- 1–2 sweet potatoes (peeled and cut into cubes)
 - 1½ cups full-fat milk
 - ½ cup coconut milk
 - 1–2 tbsp soaked sabudana (tapioca pearls)
 - 2–3 tbsp jaggery or sugar (adjust to taste)
 - A pinch of saffron or turmeric powder
 - ¼ tsp cardamom powder
 - Mixed dry fruits (chopped cashews, almonds, raisins)
 - A tiny pinch of salt
 
🍳 Method
- Boil sweet potato cubes in water until soft and mashable.
 - Add soaked sabudana and cook until translucent and tender.
 
- Add jaggery or sugar as per your taste preference.
 - Stir in saffron strands (or turmeric for color), dry fruits, and a pinch of salt.
 
- In a separate pan, boil the regular milk.
 - Once it comes to a boil, add it to the sweet potato mixture.
 - Stir in cardamom powder for flavor.
 
- Gently mix in the coconut milk and cook on low flame until the kheer thickens and turns creamy.
 
- Let the kheer cool down.
 - Refrigerate and serve chilled for best taste.
