📝 About the Recipe

Sweet potatoes are not only delicious but also packed with fiber, essential vitamins, and minerals. This kheer (pudding) made from sweet potato and milk is a nutrient-rich, energy-boosting dessert, traditionally prepared during festivals like Gudi Padwa in Goan homes. Adding coconut milk makes it even more indulgent and aromatic.

🧂 Ingredients

  • 1–2 sweet potatoes (peeled and cut into cubes)
  • 1½ cups full-fat milk
  • ½ cup coconut milk
  • 1–2 tbsp soaked sabudana (tapioca pearls)
  • 2–3 tbsp jaggery or sugar (adjust to taste)
  • A pinch of saffron or turmeric powder
  • ¼ tsp cardamom powder
  • Mixed dry fruits (chopped cashews, almonds, raisins)
  • A tiny pinch of salt

🍳 Method

Cook the Sweet Potato & Sabudana
  • Boil sweet potato cubes in water until soft and mashable.
  • Add soaked sabudana and cook until translucent and tender.

Sweeten & Flavor
  • Add jaggery or sugar as per your taste preference.
  • Stir in saffron strands (or turmeric for color), dry fruits, and a pinch of salt.

Add Milk
  • In a separate pan, boil the regular milk.
  • Once it comes to a boil, add it to the sweet potato mixture.
  • Stir in cardamom powder for flavor.

Add Coconut Milk
  • Gently mix in the coconut milk and cook on low flame until the kheer thickens and turns creamy.

Chill & Serve
  • Let the kheer cool down.
  • Refrigerate and serve chilled for best taste.
