Karela (bitter gourd) is known for its numerous health benefits — it boosts the immune system, lowers cholesterol, and aids digestion. Although its bitter taste turns many away, shallow frying it with semolina (rava) turns it into a crispy, delicious side dish that even children will enjoy.

🧂 Ingredients
- 2–3 karela (bitter gourds)
- ½ cup rava (semolina) for coating
- Salt to taste
- 1 tsp red chili powder
- ½ tsp turmeric powder
- Oil for shallow frying
🍳 Method
Prep the Karela- Wash and cut the karela into thin round slices or small pieces.
- Clean the inside and remove seeds.
- Apply salt generously and let sit for 5–10 minutes (this reduces bitterness).
Marinate
- After 5–10 minutes, squeeze out the excess water from the karela.
- Marinate with turmeric and chili powder.
Coat with Rava
- Spread rava on a plate and coat each marinated karela piece evenly.
Fry Until Crispy
- Heat oil on a flat pan or tawa.
- Place the rava-coated karela pieces and shallow fry on both sides until golden brown and crispy.
