Bhindi (lady finger/okra) is one of the most commonly available vegetables in India — fresh, affordable, and versatile. This Goan-style Bhindi Bhaji is cooked with a light tempering, grated coconut, and the distinctive kokum (sol), giving it a mild tang and signature Konkan flavor.
Perfect for a light lunch or dinner, this simple dish pairs beautifully with steamed rice and Goan curry.

🧂 Ingredients
- 8–9 lady fingers (bhindi)
- 1 small onion (chopped)
- 1 small tomato (chopped)
- 2 green chilies (slit or chopped)
- ½ cup freshly grated coconut
- 1–2 kokum petals (or a small tamarind piece as substitute)
- Salt to taste
- 1 tsp oil
🍳 Method
Prep the Bhindi- Wash the bhindi thoroughly and pat dry.
- Cut into 1-inch pieces and keep aside.
- Heat 1 tsp oil in a pan.
- Add chopped onions and fry until golden brown.
- Add tomatoes and green chilies. Cook for 2–3 minutes until softened.
- Add chopped bhindi and stir well.
- Pour a little water, just enough to help cook the vegetable.
- Season with salt to taste. Cover and let cook on low-medium heat until bhindi softens (around 8–10 minutes).
- Once bhindi is cooked, add grated coconut and kokum.
- Mix gently and cook uncovered for another 5 minutes, letting the flavors come together.
🍽️ Serving Suggestions
- Serve hot with Goan rice, varan, or even chapati.
- Can be enjoyed as a side dish with fish curry rice or any vegetarian thali.
