🌿 Methi Bhaji – Goan Style Fenugreek Stir Fry
Methi (Fenugreek leaves) is rich in vitamins, minerals, and fiber. This simple Goan-style recipe is not only healthy but also delicious and quick to prepare.
📝 Ingredients:
- 1 bunch Fresh Methi (Fenugreek) leaves
- 1 Onion (chopped)
- 1–2 Green Chilies (slit)
- 2 tbsp Grated Coconut
- 1 tbsp Soaked Toor Dal (optional)
- 1 tsp Jaggery (adjust to taste)
- Salt – to taste
- 1–2 tsp Oil
- Water – as needed
👩🍳 Method:
- Wash and clean the methi leaves thoroughly to remove dirt and bitterness.
- Chop the leaves finely and keep aside.
- Heat oil in a pan.
- Add chopped onion and sauté till golden brown.
- Add chopped methi leaves, green chilies, and soaked toor dal.
- Add jaggery and a splash of water. Cover and cook on medium heat.
- Once the methi is partially cooked, add grated coconut and salt.
- Stir well and continue to cook on low-medium flame until methi is fully cooked and soft.
✅ Tips:
- If methi is too bitter, soak chopped leaves in salted water for 10 mins and rinse before cooking.
- Soaked toor dal adds texture and protein, but it’s optional.
- Jaggery balances the natural bitterness of methi and enhances flavor.
