Made with fresh coconut, jaggery or sugar, and fragrant cardamom, this delightful treat symbolizes sweetness, joy, and togetherness. 📝 Ingredients
2 cups fresh grated coconut
1½ cups grated jaggery or sugar
½ cup milk
½ teaspoon cardamom powder
2 teaspoons pure ghee (plus extra for greasing)
2 tablespoons chopped cashew nuts
2 tablespoons chopped almonds (optional)
A pinch of salt 👩🍳 Method
Grease a tray or plate lightly with ghee and keep it ready.Heat a heavy-bottomed pan and add the grated coconut.Pour in the milk and cook on low heat for 2–3 minutes, stirring continuously.Add the grated jaggery (or sugar) and mix until it melts completely.Stir continuously until the mixture thickens and begins to leave the sides of the pan.Add the cardamom powder, chopped cashew nuts, chopped almonds, and a pinch of salt. Mix well.Add the ghee and stir for another 2–3 minutes until the mixture comes together.Transfer the mixture immediately to the greased tray and spread it evenly using a greased spatula.Allow it to cool completely.Cut into squares or diamond shapes and serve.💡 Cooking Tips
Freshly grated coconut gives the best flavour and texture.Stir continuously to prevent the mixture from sticking or burning.Do not overcook, as the barfi may become hard.For a richer taste, use jaggery instead of sugar.Store in an airtight container for up to 3 days at room temperature or up to a week in the refrigerator.
