Servings: 3
Cooking Time: 15–20 minutes
Cuisine: Goan
Author: Puja Raghuvir Naik

🌰 Ingredients

  • 1 cup freshly grated coconut
  • 3/4 cup grated jaggery
  • 1 teaspoon pure ghee
  • A pinch of salt
  • Chopped nuts (cashew or almonds)
  • (Optional) 1/4 tsp cardamom powder

👩‍🍳 Method

  1. Make the jaggery syrup: In a pan, add grated jaggery and a little water. Heat until it melts and forms a smooth syrup. Strain if needed to remove impurities.
  2. Roast the coconut: In another pan, heat ghee. Add grated coconut and roast on medium flame until golden brown and aromatic.
  3. Combine: Add the jaggery syrup to the coconut. Stir continuously on low to medium heat.
  4. Cook the mixture: Cook until the mixture thickens and begins to leave the sides of the pan. Add a pinch of salt, nuts, and cardamom powder (if using). Mix well.
  5. Shape the ladoos: Turn off the heat and allow the mixture to cool slightly. Grease your palms with ghee or oil, take small portions, and roll into round ladoos.
  6. Serve: Enjoy warm or at room temperature. Store in an airtight container.

🍬 Tip

  • You can use desiccated coconut, but fresh coconut gives the best taste and texture.
  • Add a few raisins or dry grated coconut on top for garnish
