🌰 Ingredients
- 1 cup freshly grated coconut
- 3/4 cup grated jaggery
- 1 teaspoon pure ghee
- A pinch of salt
- Chopped nuts (cashew or almonds)
- (Optional) 1/4 tsp cardamom powder
👩🍳 Method
- Make the jaggery syrup: In a pan, add grated jaggery and a little water. Heat until it melts and forms a smooth syrup. Strain if needed to remove impurities.
- Roast the coconut: In another pan, heat ghee. Add grated coconut and roast on medium flame until golden brown and aromatic.
- Combine: Add the jaggery syrup to the coconut. Stir continuously on low to medium heat.
- Cook the mixture: Cook until the mixture thickens and begins to leave the sides of the pan. Add a pinch of salt, nuts, and cardamom powder (if using). Mix well.
- Shape the ladoos: Turn off the heat and allow the mixture to cool slightly. Grease your palms with ghee or oil, take small portions, and roll into round ladoos.
- Serve: Enjoy warm or at room temperature. Store in an airtight container.
🍬 Tip
- You can use desiccated coconut, but fresh coconut gives the best taste and texture.
- Add a few raisins or dry grated coconut on top for garnish
